Mac and Cheese with a Twist

This recipe was inspired by my intention to incorporate vegetables in every dish that my daughter eats. She actually eats it! Not only does it make many servings (that I freeze) but it is also relatively inexpensive (no fancy cheese).

- 1 package of organic frozen spinach

- 2 oz of pepper jack cheese

- 2 oz of mild cheddar

- sprinkle of Parmesan cheese and panko

- plenty of nutmeg

- salt and pepper

- bechamel sauce (you can also just make a quick rue with a little butter, flour and milk and call it a day. The purpose is to make a little sauce to bind the dish and to cut down on the amount of cheese)

Cook the pasta according to package instructions.

Make the bechamel / rue in a pan large enough to fit all ingredients

Add the defrosted package of spinach, cheese, nutmeg and seasoning

Mix together until ingredients are combined

Add the al dente pasta

Transfer all to baking dish and sprinkle top with panko and Parmesan cheese

Bake in oven until golden and serve

Enjoy!

Tea is Served

Among the many gifts that the end of the year has bestowed upon my family, the most mundane of all turned out to be special.

My husband, knowing my interest in tea, bought me a Breville electric kettle. His thoughtful gift has allowed us to switch to tea more often (and rely less on coffee) and to explore all kinds of flavourful concoctions brewed to perfection thanks to the kettle's settings for green, white, oolong or black tea.

Brewing tea is not exactly my hobby but I enjoy trying out new kinds and sharing it with friends. There's something about drinking tea that is comforting and, if you add delicious and healthy, it sounds like a positive start for 2010.

...

For some time now, lavander has been my favorite scent; I get lavander soaps, shampoo, body lotions, perfumes and candles. Lavander is used in aromatheraphy as a mild sedative for better sleep or to diminish stress and anxiety. It also has antiseptic and anti-inflammatory properties.
I was digging in the web to order dried lavander flowers and the variety in price and quality is abysmal.
If you are interested in buying lavander products I recommend that you get lavandula agustifolia, especially in essential oils.

Cell Phone Rescue

Have you ever dropped your phone in water? I have twice, in the toilet and in the washing machine. Apparently, in some cases, they can be saved! According to a useful article in American Baby, here's what to do:
- Remove the battery
- Seal battery and phone in Tupperware
- Add a silica gel pack
- Wait 1 day before reassembling your device and turning it on
I wished I had known this with the other two phones.

Dr Weil

Dr Andrew Weil has been my health care referent for many years now. I first discovered him when I was getting regular ear infections and, instead of antibiotics, I decided to take a more "natural" approach. By reading about Integrative Medicine and Dr Weil, I took his suggestion of strengthening the immune system to fight all kinds of infections and it worked like magic (or should I say like medicine?). Since then, I've been taking his multivitamins regularly. One great plus of these vitamins is that they do not upset my stomach as other brands did in the past. Also, Dr Weil has designed a plant based beauty line for Origins that I have personally tried and loved.
Check out Dr Weil's website for tips on healthy living, products for optimum health and information on Integrative Medicine.
